thai fried rice

A friend from our Saturday dana group at VBG Temoh, taught me this.  My daughters comment "好好吃!"
 
[1]  Cut chicken into small pieces.
[2]  Marinate chicken with a bit of soya sauce, pepper & sugar.
[3]  Fry lemon grass (chopped fine) with a little oil, then dish out.
[4]  Fry dried prawns with pepper, then add in marinated chicken.
[5]  Add in rice and fry till rice is dry (jumping).
[6]  Add in long beans (chopped fine) & carrot (chopped fine).
[7]  Add a little bit of sugar and salt, to taste.
[8]  Lastly, add in "bunga kantan" (chopped fine), basil leaves(chopped fine), coriander(chopped fine) and chili padi (chopped fine) - stir fry for a short while.

sweet & sour pork ribs (甜醋排骨)

My cousin sister taught me this dish.
[1]  Wash pork ribs (排骨) and marinate it with soya sauce, pepper, sugar and a bit of dark soya sauce.
[2]  Mix pork ribs with a little bit of corn flour.  Fry/deep fry the pork ribs.  Dish out.
[3]  Put a little bit of butter/oil into wok.
[4]  Add in vinegar (醋), for sauce, and let it boil.
[5]  Add in pork ribs - stir fry for a short while.
[6]  Arrange pineapple on plate, dish out pork ribs & sauce.  Serve.

apple celery juice

 
Ingredients
> 4 green apples
> 2 sticks of celery
> 2 basil leaves
> 2 mint leaves

For garnishing
> Apple slice
> Celery stick 

Method
Juice the apple and celery and finely crush in the basil and mint leaves.  Pour contents over ice into glass and garnish.

standing eggs - myth busted

No summer solstice, no winter solstice,
No spring equinox, no autumn equinox,
And no 'Duanwu Jie',
Just a typical Wednesday afternoon.

16th June 2010 was Duanwu Jie - the fifth day of the fifth moon, or double fifth.  I tried this traditional activity... a game of making eggs stand at noon.
It is a widespread belief that eggs can stand on summer solstice, winter solstice, spring equinox and autumnal equinox.

Dr Chong (Universiti Sains Malaysia Astronomy Club academic adviser Assoc Prof Dr Chong Hon Yew) explained that an egg, just like a book, had a centre of gravity and when it passed through the object and made contact with the surface, it would stand.

It all boiled down to friction, stability and smoothness of the surface. It is a delicate experiment and has to be done with patience.

Natural alternative for COUGH
~ honey & garlic & some sunlight

[1]  Peel a handful of garlic pips.
[2]  Crush lightly.
[3]  Add to a jar of honey.
[4]  Seal the jar tightly.
[5]  Leave by the window, where it can get sunned regularly.
[6]  Allow to stand for 2 weeks.

Note:
> This can then be kept in the refrigerator for better long-term preservation.
> The dosage for both dry and productive cough is 1-3 teaspoons, 2-3 times a day.
> After consuming this formula, do not drink or eat to allow the 'cough syrup' to remain in the throat area for a little longer.
> Honey has a powerful demulcent (soothing) effect on the throat.
> Garlic, especially when 'aged' and 'sunned' is activated and becomes one of Nature's most powerful antiseptic formulas.

playdough

Made some play dough for my girls this evening and they just love them!

Ingredients
> 1 cup of plain flour
> 2 tbsp of cream of tartar
> 1 tbsp of cooking oil
> 1/2 cup of salt
> 1 cup of boiling water
> food colouring


Method
[1]  Put all ingredients into a mixing bowl.
[2]  Mix well and knead.

Note:  You may add peppermint oil for longer lasting play dough.

steamed pandan cake

Ingredients
> 2 eggs
> 168ml fresh milk
> 250g sugar
> 2 tsp double action baking powder
> 2 tsp sponge quick (sponge stabilizer/ovalett)
> 300g low protein flour (sieved)
> 10 tsp pandan juice

Method
[1]  Mix ingredients into mixing bowl and beat until fluffy.
[2]  Put paper cups into cup mould.
[3]  Pour in batter.
[4]  Arrange cup moulds in wok and steam for 15 minutes.

honey ginger chicken

1st attempt on this dish was during Chinese New Year in 2009.  A friend found an easy to cook dish for me to cook for the reunion dinner.
Ingredients
> 3 chicken whole legs, cut into serving pieces
> 1 tbsp light soya sauce
> 1 tbsp corn flour
> 50g young ginger, sliced 

Marinade
> 1/2 tsp salt, 2 tbsp sugar, 4 tbsp white rice vinegar

Sauce
> 3 tbsp honey, 1/2 tsp salt, 1 tbsp light soya sauce, 1 tbsp marinated ginger juice

Method
[1]  Mix young ginger with marinade and season for 1 hour.
[2]  Mix chicken with light soya sauce, corn flour and deep-fry in hot oil until cooked and golden brown.  Dish & drain.
[3]  Pour sauce into a pan, add in  drained ginger pickles and cook at low heat until thick.
[4]  Add in fried chicken, mix well and dish up.

I tried this dish recently after having it at my cousin sister's place.  It was not bad, except that the mango I used was a bit too ripe.

salty fishy tofu soup

[1]  Mix minced meat with cornflour, soya sauce, a bit of sugar to taste.
[2]  Make into small meatballs.
[2]  Stir-fry ginger (4 pcs.), garlic (2 small cloves), "harm yue kuet" (3 pcs.) till fragrant.
[3]  Add in 1 1/2 bowl water and boil for 20 minutes.
[4]  Add meatballs into soup and boil.
[5]  Lastly, add in tofu, boil soup for a little while before serve.
