honey ginger chicken

1st attempt on this dish was during Chinese New Year in 2009.  A friend found an easy to cook dish for me to cook for the reunion dinner.
Ingredients
> 3 chicken whole legs, cut into serving pieces
> 1 tbsp light soya sauce
> 1 tbsp corn flour
> 50g young ginger, sliced 

Marinade
> 1/2 tsp salt, 2 tbsp sugar, 4 tbsp white rice vinegar

Sauce
> 3 tbsp honey, 1/2 tsp salt, 1 tbsp light soya sauce, 1 tbsp marinated ginger juice

Method
[1]  Mix young ginger with marinade and season for 1 hour.
[2]  Mix chicken with light soya sauce, corn flour and deep-fry in hot oil until cooked and golden brown.  Dish & drain.
[3]  Pour sauce into a pan, add in  drained ginger pickles and cook at low heat until thick.
[4]  Add in fried chicken, mix well and dish up.
