"mui choy chu yok" (梅菜猪肉)

My 4th aunt taught me this dish.  I felt like drooling when I snapped this picture.

I tried this dish recently after having it at my cousin sister's place.  It was not bad, except that the mango I used was a bit too ripe.
 
This dish (above picture) was cooked by my cousin brother.
